Heavenly Apple – Cinnamon loaf

I love apples. For me, they are my ‘happy fruit’. I use them in salads, stews, pies, breads and even as an ingredient in cakes. This is one fruit that can be used raw or literally beaten into submission. And, it always cooperates. Never complains. Hmm…unlike my wayward kids!

But, today I cannot complain because my older daughter helped bake this one. The recipe is mine but the effort is hers. So, today I am a happy Mommy, grinning like a Cheshire cat because I get to have my cake and eat it too…literally! lol.

HEAVENLY APPLE-CINNAMON LOAF

INGREDIENTS

  1. 1 apple, peeled and cut into thin slices
  2. 1 ½ cup all purpose flour (maida)
  3. ½ cup milk (at room temperature)
  4. ½ cup butter (at room temperature)
  5. 2 eggs (at room temperature)
  6. 2/3 cup granulated white sugar
  7. 1/3 cup granulated brown sugar
  8. 1 ½ tsp baking powder
  9. 2 tsp vanilla essence
  10. 1 tsp cinnamon powder

METHOD

  1. In a bowl combine and brown sugar and cinnamon powder. Separate into two servings and keep aside.
  2. In another bowl sift the flour and the baking powder. Keep aside.
  3. In another mixing bowl combine the white sugar and butter. I prefer to use an electric hand mixer for this but you can use a hand whisk (but remember to whisk vigorously. The idea is to make the batter fluffy so that it has max air. That helps the cake rise evenly and it comes out spongy). Once the mixture is evenly mixed (about 1-2 minutes) add the eggs one by one and continue to mix. Add the vanilla essence and milk and beat for a further 1-2 minutes.
  4. To the above mixture add the bowl of flour and baking powder, little by little, mixing all the while. The end result will be a cream colored fluffy batter.
  5. Take a loaf tin (min 9 x 5 inches or max 12 x 5 inches). Grease the tin and dust it with some dry flour.
  6. Preheat the oven to 180 deg C
  7. Divide the batter into two portions. Pour half of it into the baking loaf and layer half of the sliced apples on that. Sprinkle half of the brown sugar and cinnamon powder mixture on top. With your finger tips gently push the apples into the batter.
  8. Cover the above with the remaining batter and lay the remaining slices of apple of top. Sprinkle all of the left over brown sugar and cinnamon mixture and again press the apples gently into the batter.
  9. Bake at 180 deg C for 1 hour and 25 – 30 minutes or until a toothpick inserted into the center comes out clean. Yes, it takes that long.
  10. Serve hot.
