Spice rubbed chicken breast

My elder daughter loves chicken. For her, a meal if it does not involve chicken is incomplete. So, it is no surprise that when she dons the apron in the kitchen, it is chicken on the menu. This is one of her recipes that she made for us recently. And, I tell you it tastes amazing!

The plump chicken breasts marinated in this spicy rub are sure to get your taste buds afire. A word of caution – If you do not like spicy food, reduce the amount of spice that the recipe calls for.

The best part about this recipe is that even the leftovers can be consumed in wraps, tacos, tortillas or even grilled chicken sandwiches.

 

SPICE RUBBED CHICKEN BREAST

INGREDIENTS

3-4 chicken breasts

 For the spice rub

Juice of 1 lime

1 tsp Salt (or as per taste)

1 tsp pepper

1 tsp paprika

1 tsp cumin powder

1 tsp garlic powder

½ tsp chili flakes

1 tsp dried parsley

1 tsp mixed Italian herbs

1 tsp olive oil/refined oil + 1 tbsp for cooking

1 tsp mixed sage and rosemary (optional)

METHOD

  1. In a mixing bowl combine all ingredients for the spice rub and keep aside.
  2. Wash the chicken breasts, pat them dry and then score them. Scoring allows for even cooking and also allows the spice rub to penetrate deeper so that the interior of the chicken carries flavour too. In order to score the chicken, with a sharp knife make shallow incisions (about an inch in length). Make about three one side and repeat after flipping over the chicken breast.
  3. After scoring the chicken breast rub the spice mix directly into the meat with your finger tips. The more you massage it, the better the meat will marinate. Let the meat sit in the mix for about 30-40 minutes.
  4. Heat a girdle pan and brush it with some oil. Make sure the girdle is really hot before you lay the chicken breasts down on it. The girdle should emit a sizzle sound when you lay the meat. Reduce the heat and cook for approximately 6-7 minutes per side or until done.
  5. You can serve this with a dish of mashed or even roasted potatoes or can use this for a filling for tacos, tortillas or wraps. It also makes for a delicious burger filling.
