When I have a super busy day ahead and no time to cook breakfast, I bank upon this power packed dish made with leftovers.
HODGEPODGE BREAKFAST PIE
(laugh all you want but the name stays!)
INGREDIENTS
1. 3 leftover/fresh wheat chapattis (tortillas work just as well)
2. 4 eggs, lightly beaten with salt
3. pepperoni slices (8-10)
4. 1/2 cup boiled boneless chicken (you can use sausages also. This is a pretty versatile dish)
5. 2-3 slices of ham, sliced lengthwise
6. 1 medium sized red onion, sliced thinly
7. 1 cup red, green and yellow peppers, sliced lengthwise.
8. 1/4th cup chopped parsley/coriander leaves
9. 2 tsp oil
10. 1/4 cup chopped mushrooms (optional)
11. 1/2 cup grated cheddar cheese
12. salt, pepper and red chili flakes to taste.
METHOD
1. pre heat oven to 200 deg C.
2. use 1 tsp of oil to grease a pie dish. line it with the chapatis – bottom and sides. set aside.
3. heat remaining oil in a pan. Toss in the onion and peppers. Saute for 5 minutes. Then add the slices ham and boiled chicken. Saute for 5-8 more minutes (no need to brown the filling). Let it cool.
4. beat the eggs with adequate salt, pepper, chili flakes and some of the chopped coriander.
5. Line the top of the chapatis with pepperoni. Add the prepared and cooled mixture on top. Spread it evenly.
6. sprinkle half the cheese and then gently pour in the eggs.
7. sprinkle the remaining cheese and some coriander
8. bake at 200 deg C for 30 minutes or till done.
9. Serve hot with ketchup.
